Chicken Cheese Puff Recipe

• 1 (20 ounce.) can crushed pineapple, liquid removed
• 8 Large eggs, lightly beaten
• 3 c. shredded Monterey jack cheese
• 2 c. sm. curd cottage cheese
• 1/2 c. flour
• 1 teaspoon baking pwdr
• 1/2 teaspoon salt
• 1 (4 ounce.) can minced green chilies
• 2 c. diced cooked chicken
• 2 tbsp. butter
• 1/3 c. grated Parmesan cheese

1. Blend pineapple with next 8 ingredients.
2. Heat butter in 9 x 13 inch shallow baking dish.
3. Pour mix into dish.
4. Sprinkle with Parmesan cheese.
5. Bake in 350 degree oven 40 to 45 min.
6. Serves 6 to 8.
