Catfish with Sesame Seeds

  1. Wash and pat the fish with dry paper towels.
  2. Cut the catfish diagonally into 1-inch strips.
  3. In a shallow pan, combine the cornmeal, flour, salt and pepper to taste.
  4. Lightly dredge the fish in the cornmeal mixture.
  5. Melt the lard in a large skillet and pan-fry the catfish until golden brown.
  6. Drain on paper towels.
  7. Sprinkle the fish with the toasted sesame seeds.
  8. Serve with White Remoulade.
