Potato Salad With Tarako
- 400 grams Potatoes
- 80 grams Tarako (salt-cured cod or pollack roe)
- 4 tbsp Mayonnaise
- 1 bit less than 1 teaspoon Sugar
- 1/2 to 1 teaspoon Vinegar
- 2 to 3 tablespoons Green onion or scallion, chopped
- Microwave or boil the potatoes.
- Mix the mayonnaise, vinegar and sugar together.
- Mix the tarako into the mixture from Step 2.
- Mash the potatoes while they are still hot.
- Add the combined sauce from Step 3 to the still warm mashed potatoes.
- Taste, and adjust the seasoning.
- Add the finely chopped green onion and chill in the refrigerator.
