Easy One-Skillet Stroganoff
- 1-1/2 tsp. oil
- 1 onion, thinly sliced Safeway 1 lb For $1.49 thru 02/09
- 2 cups frozen BOCA Veggie Ground Crumbles
- 1/4 tsp. garlic powder
- 1 can (14-1/2 oz.) vegetable broth
- 1 can (8 oz.) mushroom pieces and stems, drained
- 3 cups egg noodles, uncooked
- 1 container (8 oz.) BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 Tbsp. chopped fresh parsley
- Heat oil in large nonstick skillet on medium-high heat.
- Add onions; cook 10 min.
- or until lightly browned, stirring frequently.
- Add all remaining ingredients except sour cream and parsley; mix well.
- Bring to boil; cover.
- Simmer on medium-low heat 10 to 12 min.
- or until crumbles are cooked through (160 degrees F) and noodles are tender, stirring occasionally.
- Remove from heat.
- Stir in sour cream; sprinkle with parsley.
