Crispy Sunflower Seed Cookies
- 1 cup butter
- 1 cup brown sugar (lightly packed)
- 1 cup white sugar
- 2 eggs, well beaten
- 1 tbsp. vanilla extract
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 2 cups rolled oats
- 2 cups rice crispies cereal
- 1-1/4 cup roasted sunflower seeds
- 1/2 cup packed brown sugar
- 1/4 cup whipping cream
- whole milk
- 1/3 cup icing sugar
- Cream butter and sugars till fluffy.
- Beat in eggs, one at a time, and vanilla.
- Mix flour, baking soda and baking powder in seperate bowl.
- Stir into creamed mixture.
- Blend in oats, rice cereal and sunflower seeds.
- Form into 1 inch balls and place 2 inches apart on greased baking sheet.
- Flatten with fork.
- Bake at 350F for 12-15 minutes or until golden.
- Cool and drizzle Caramel Icing over cookies.
- Caramel Icing: In small pan mix sugar and cream.
- Bring to a boil over medium heat, stirring constantly for one minute.
- Transfer to a bowl and beat in icing sugar until smooth.
- Drizzle over cookies.
