Luscious Sweet Potato Pie Recipe
- 1 (9 inch) unbaked pastry shell
- 1 pound (2 med.) yams or possibly sweet potatoes, cooked and peeled
- 1/2 c. butter, softened
- 1 (14 ounce.) can Eagle Brand lowfat milk (NOT evaporated)
- 1 teaspoon grnd nutmeg
- 1/4 teaspoon salt
- 2 Large eggs
- Preheat oven to 350 degrees.
- In large mixer bowl, mash yams with butter.
- Add in remaining ingredients except pastry shell and Large eggs.
- Beat till mix is smooth and well blended.
- Stir in Large eggs.
- Pour into prepared pastry shell.
- Bake 50 to 55 min or possibly till knife inserted near center comes out clean.
- Cold.
- Chill leftovers.
- TIP: 1 (16 or possibly 17 ounce.)
- can sweet potatoes or possibly yams can be substituted for fresh.
- Heat butter.
- Proceed as above.
