Crispy Cheese Morsels Recipe
- 1 c. Crisco shortening
- 1/2 pound sharp Cheddar cheese, finely shredded (2 c.)
- 2 c. sifted all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 c. crisp rice cereal
- Pecan halves (optional)
- Preheat oven to 350 degrees.
- Put Crisco into a mixer bowl.
- Add in cheese gradually, beating at medium speed till mix is fairly smooth.
- Blend flour, salt, and pepper.
- Gradually add in to cheese mix, mixing at low speed.
- Stir in cereal with spoon.
- Shape into balls, using 1 Tbsp.
- for each ball.
- Arrange balls on ungreased cookie sheets.
- Lightly press with fork to make a criss-cross pattern.
- Dip fork in flour as needed to prevent sticking.
- Press a pecan half onto top of each, if you like.
- Bake at 350 degrees for 10 min or possibly till lightly browned around edges.
- Cold for 10 to 12 min on cookie sheet, then remove to a rack to cold.
- 3 to 3 1/2 dozen appetizers.
