Almond Baked Norwegian Cod
- 2 pounds fish, cod
- 13 cup flour, all-purpose
- 1 teaspoon salt
- 1/4 cup almonds slivered, roasted
- 1/2 cup butter melted
- 1/4 cup lemon juice
- 1 teaspoon lemon zest grated
- 1/4 cup scallions, spring or green onions chopped
- Cut fish into serving size pieces.
- Spray 12 x 8-inch ovenproof pan with non-stick spray.
- Coat fish with flour and salt mixture; place in single layer in pan.
- Pour butter, lemon juice and peel over fish; bake 20 to 25 minutes in 350F (180C) oven.
- Sprinkle with slivered roasted almonds and chopped green onion.
- Serves 6.
