Tofu Hamburger Steaks
- 1 block Firm tofu
- 2 Shiitake mushroom
- 1/2 Japanese scallions
- 1 chunk Ginger
- 1 pinch Katakuriko
- 1 pinch Salt, pepper
- 1 dash Vegetable oil
- 1 Soy sauce, sake, mirin, sugar
- After heating the tofu in the microwave for about 3 minutes, drain out the water using a flat dish as a weight.
- Press out excess water using a kitchen towel, then crumble the tofu.
- Finely chop the shiitake mushrooms, onion, and ginger.
- Saute them in vegetable oil, then mix with the tofu, salt, pepper, and katakuriko.
- Form into patties.
- Using a little bit of vegetable oil, brown both sides of the burger over medium heat.
- Serve with teriyaki sauce to taste.
