R.'S Beef Stroganoff Recipe
- 1 1/2 lbs. round steak or possibly sirloin
- 1 1/2 lbs. sliced mushrooms, fresh or possibly canned
- 1 c. butter
- 2 lbs. minced onions
- 1 can tomato soup
- 1 (6 ounce.) can tomato paste
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon soy sauce
- 1 c. lowfat sour cream (to be added before serving)
- Cut meat in thin strips, trim off fat and brown in butter with mushrooms and onions.
- Combine soup, paste and seasonings, then add in to meat mix.
- Cover and simmer or possibly bake on low for 2 hrs.
- Before serving, add in lowfat sour cream.
- Serve over rice.
