Chicken Fajita Quesadilla
- 1/4 cups Sweet Bell Pepper, Cut Into Thin Strips
- 1/4 cups Onion (cut Into Thin Strips)
- 2 ounces, weight Chicken, Cooked, Thinly Sliced
- 1/2 ounces, weight Mexican Cheese, Shredded
- 1 whole FlatOut Bread Or Flour Tortilla
- Optional For Serving: Plain Greek Yogurt And Salsa
- Spray a skillet with non-stick cooking spray and heat over medium heat.
- Once hot add onions and peppers and cook until softened, about 5 minutes.
- Add onions, peppers, chicken and cheese onto half of the FlatOut Bread or tortilla, and fold over the other half.
- Spray a clean skillet with cooking spray and heat it over medium heat.
- Add tortilla to skillet and cook until light golden, flip and cook other side until lightly golden and cheese is melted, about 2 minutes per side.
- Serve with plain Greek yogurt and salsa.
