Angello's Italian Garden Recipe
- 3 ounce diced fresh eggplant
- 6 ounce sliced fresh peppers, red, green or possibly yellow
- 10 x snow peas
- 2 ounce sliced onions
- 1/2 c. black olives
- 1 pch salt and fresh pepper
- 4 ounce extra virgin olive oil
- 1 Tbsp. fresh chopped garlic
- 1 Tbsp. fresh basil, minced
- 1/2 Tbsp. fresh cilantro, minced Splash white wine
- 16 ounce cooked pasta, preferably penne
- 1/4 c. grated Parmesan cheese Fresh parsley, minced
- In a medium-sized frying pan, saute/fry eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four min.
- Add in garlic, basil, cilantro and wine and saute/fry another minute.
- Toss with cooked pasta, adding Parmesan cheese.
- Sprinkle parsley over top for presentation.
- Makes two to three servings.
