Angello's Italian Garden Recipe

  1. In a medium-sized frying pan, saute/fry eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four min.
  2. Add in garlic, basil, cilantro and wine and saute/fry another minute.
  3. Toss with cooked pasta, adding Parmesan cheese.
  4. Sprinkle parsley over top for presentation.
  5. Makes two to three servings.
