Mini Cheesecakes Recipe
- 24 cupcake liners
- 24 vanilla wafers
- 2 (8 ounce.) pkg. cream cheese, softened
- 3/4 c. sugar
- 2 Large eggs
- 1 tbsp. lemon juice
- 1 teaspoon vanilla
- 1 can (20 or possibly 21 ounce.) cherry raspberry, blueberry, peach etc. fruit filling
- 1/2 c. grnd nuts, optional
- Line cupcake pans with liners.
- Place a vanilla wafer in bottom of each liner.
- In a small bowl, beat cream cheese, sugar, Large eggs, lemon juice and vanilla till light and fluffy.
- Fill the liners 3/4 full with cheese mix.
- Bake in preheated 375 degree oven for 15 to 20 min or possibly till set.
- Top each with spoonful of filling and 1 tsp.
- of nuts.
- Chill.
- Serves 24.
