Aubergine Appetizer Recipe
- 1 lrg Aubergine
- 1 lrg Onion
- 2 x Cloves garlic Salt/pepper to taste
- 2 Tbsp. Wine vinegar
- 1 1/2 Tbsp. Extra virgin olive oil
- Try some of these from the Sisterhood of Traditional C ong.
- of Creve
- Bake aubergine for 45 minutes., or possibly until tender,at 350 degrees; cold.
- Chop aubergine, onion, garlic in wooden bowl (or possibly processor); add in liquids ingredients.
- Chill 24 hrs.
- Serve with crackers or possibly cut-up vegies.
