Custardy Bread Pudding Recipe
- 2 c. bread cubes
- 2 1/2 c. lowfat milk
- 3 tbsp. butter
- 1/4 c. sugar
- 3 Large eggs
- Dash salt
- 1/2 teaspoon vanilla
- Use day old bread, crusts and all.
- Cut into 1/4 to 1/2 inch cubes.
- Place these into a buttered 1-qt baking dish.
- Scald lowfat milk with butter and sugar.
- Beat Large eggs slightly; add in salt.
- Stir into hot lowfat milk and vanilla.
- Set baking dish into a pan of warm water with water coming up to the level of the pudding and bake in a moderate oven (350 degrees) for about 1 hour or possibly till a small knife comes out clean when inserted in center of pudding.
- You can also add in raisins with the other ingredients if you like.
- Makes 4-6 servings.
- A good added touch - sprinkle top of custard with nutmeg before baking.
