Roasted Vegetable and Rocket Salad

  1. Cook pasta in a large saucepan of boiling water for 10-12 minutes, or until aldente.
  2. Drain and rinse under cold water.
  3. Toss sweet potato and onion in half the oil, place onto an oven tray and bake at 180 degrees C for 12-15 minutes.
  4. Toss tomatoes in remaining oil and add to oven tray.
  5. Cook vegetables a further 5 minutes.
  6. Allow to cool slightly.
  7. Combine all ingredients in a large bowl.
  8. Serve salad on its own, or as an accompaniment with grilled meats.
