Guacamole, Corn & Feta Dip
- 1- 1/2 cup Fresh Or Frozen Corn Kernels
- 1 Tablespoon Olive Oil
- 3 whole Large Avocados
- 1/4 cups Red Onion, Diced
- 1/4 cups Lime Juice
- 1 Tablespoon Garlic Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Crushed Red Pepper
- 6 ounces, weight Crumbled Feta Cheese
- Add corn and olive oil into a skillet, place over a medium to high heat and cook for about 5 minutes.
- Stir occasionallythe goal here is to char the corn and blacken it a little bit.
- Remove from heat and set aside.
- Peel and pit the avocados and mash them in a bowl with a fork.
- Add onion, lime juice, garlic salt, black pepper and red pepper.
- Mix well and add the charred corn.
- Put it into a serving bowl (I reserved some corn for sprinkling on top of the finished guac) and sprinkle feta over it.
- Serve with chips and enjoy.
