Mixed Summer Berry and Yogurt Parfaits with Toasted Coconut

  1. Preheat oven to 350 degrees F. Place coconut on a sheet tray and toast 1 to 2 minutes, checking every 30 seconds.
  2. Remove as soon as coconut starts to brown.
  3. Set aside.
  4. Spoon about 1/4 cup of yogurt into a wine or martini glass.
  5. Layer on about 2 tablespoons each of graham crackers, diced strawberries, and mixed berries.
  6. Add another layer of each, then finish with a sprinkle of the toasted coconut.
  7. Repeat with 7 more glasses and serve immediately.
