Tom Yum soup
- 5 cup water
- 3 shallots finely chopped
- 2 stalks of lemongrass bruise cut into 1 inch segments
- 2 tbsp fish sauce
- 2 tbsp fresh minced ginger
- 20 medium shrimp shelled but with tail left on
- 1 can straw mushrooms (my favorite) drained
- 3 tsp sliced kaffir lime leaves or lime zest
- 3 tbsp lime juice
- 3 Thai chili peppers or grove peppers seeded and minced
- in a medium sized soup pot add water, shallots, lemongrass, fish sauce, and ginger bring to boil then simmer 3 minutes.
- add shrimp and straw mushrooms and cook till shrimp turns pink.
- stir in remaining ingredients.
- cover and remove from heat let steep for 5-10 minutes then serve.
