Mexican Cheesecake Recipe
- 2/3 c. finely crushed tortilla chips
- 2 tbsp. butter, melted
- 1 c. cottage cheese
- 3 (8 ounce.) Packages cream cheese, softened
- 4 Large eggs
- 1 ounce. shredded sharp natural Cheddar cheese
- 1 (4 ounce.) can minced green chilies, liquid removed
- 1 (8 ounce.) container jalapeno Cheddar gourmet dip
- 1 c. minced tomatoes
- 1/2 c. minced green onions
- 1/4 c. pitted ripe olives (sliced)
- Makes 10 to 12 servings.
