Sourdough Bread With Olives & Goat Cheese
- 1/4 cup Land O Lakes Butter
- 2 tablespoons chopped shallots or onion
- 1 teaspoon chopped fresh thyme leaves*
- 1/2 teaspoon finely chopped fresh garlic
- 4 (1/2-inch) slices round French bread
- 3 Roma tomatoes, each cut into 4 slices
- 1/4 cup Chevre cheese (soft white goat cheese)**
- 2 tablespoons pitted, chopped kalamata olives
- Salt
- Coarsely ground pepper
- Heat broiler.
- Melt butter in 8-inch skillet until sizzling; stir in shallots, thyme and garlic.
- Cook over medium heat, stirring occasionally, 1-2 minutes or until shallots are tender.
- Place bread slices onto broiler pan.
- Broil 5 to 6 inches from heat 2-3 minutes or until toasted.
- Turn; spoon butter mixture on each bread slice.
- Top each bread slice with 2 slices tomato.
- Dollop each with about 1 tablespoon goat cheese; sprinkle with 1 1/2 teaspoons olives.
- Season with salt and pepper.
- Continue broiling 1-3 minutes or until cheese softens and edges of bread begin to brown.
