Chef Thomas's Traditional Pesto
- 2 1/2 oz of basil leaves
- 3 clove of garlic chopped
- 1 tbsp roughly chopped pine nuts
- 2 tbsp finely grated Parmesan cheese
- 1/3 cup EVOO
- 1 salt and fresh cracked pepper
- This recipe is inspired by Chef Paul Gayle... And altered by Chef Thomas(me)
- Put all dry ingredients in blender...
- Except your salt and pepper
- With the motor running slowly pour in the olive oil in a thin stream through the feeder tube and blend until smooth
- then add your salt and pepper to taste
- makes about 2/3 cup
