DAiS Welcoming Vegetarian Brunch Pie

  1. In a large cast iron pot saute onions, garlic, and bell pepper in veggie oil.
  2. Add veggies, and saute.
  3. Add beaten eggs and cook until set, not completely cooked.
  4. Season with salt, pepper, and Cajun seasoning to taste.
  5. Roll out one pie crust on pizza pan.
  6. Pile egg mixture on crust leaving about 1 on ends.
  7. Drain as much liquid off the mixture as possible.
  8. If using cheese, place cheese on top of mixture.
  9. Place the second pie crust on top of mixture.
  10. Press down ends of top crust and fold bottom crust over top ends.
  11. Bake at 350 degrees for one hour.
  12. Let sit for 3-5 minutes before cutting.
  13. One pie, 10x11 SS half pan will serve 8 people.
