Baked Stuffed Pork Chops Recipe
- 4 x rib or possibly loin pork chops, cut 1" thick
- 1 Tbsp. onion, minced
- 1/4 c. celery, finely diced
- 2 c. dry bread crumbs
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp sage
- 1/8 tsp poultry seasoning
- 1/2 c. water salt and pepper, to taste
- Slit a pocket along the bone side of each chop.
- Prepare the stuffing by browning the onion and celery in a little fat, then combining with crumbs, salt and pepper, sage and poultry seasoning and water.
- Stuff each chop with 1/4 of the mix.
- Skewer edges together with toothpicks; season chops with salt and pepper.
- Place in baking pan.
- Cover and bake in a moderate 350 degree oven for one hour.
- Remove cover and continue baking another 30 min to brown.
- Serves 4.
