Santa Fe Rice and Beans
- 2 cups cooked white rice
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn
- 1 (14 1/2 ounce) can diced tomatoes
- 1 cup salsa
- 1 cup low-fat sour cream
- 2 cups 2% mexican cheese blend, divided
- 1 medium red onion
- 1 bell pepper
- 2 medium zucchini
- Preheat oven to 350.
- In a large bowl, all ingredients except 1 cup cheese.
- Season with salt and pepper to taste.
- Transfer to a greased 9x13 pan.
- Bake uncovered for 30 minutes.
- Sprinkle with reserved cheese and bake until cheese melts.
