Elvis Waffles
- 1 (7 ounce) packagejiffy oatmeal muffin mix
- 1 egg
- 13 cup nonfat milk
- 2 bananas, sliced thin
- 2 tablespoons peanut butter
- 2 tablespoons honey
- Warm up waffle iron ( can make pancakes if you wish to instead ).
- In medium bowl combine mix, egg, milk and bananas.
- Combine until well mixed.
- Spray the waffle iron with butter spray and a 1/2 cup measure.
- Using the measuring cup, ladle mixture onto warmed waffle iron and cook according to instruction to your waffle iron.
- Mine says until the steaming quits, but I find that is too long.
- The sugars in the bananas will , what I call, crystallize.
- Remove to platter and keep warm while you finish off the other waffles.
- I find that by 1/2 cup measures I get 4 good sized waffles.
- In 4 small bowls, divide the peanut butter and the honey.
- Warm this up right before serving in the microwave to make a Peanut Butter Syrup.
- Place still warm waffles on plate, pour syrup on top or serve on the side in their little bowls.
