Plain Rice: Absorption Method One

  1. Rinse or wash: 1 cup short-grain rice
  2. Drain well and put into a heavy saucepan with: 1 cup plus 2 tablespoons cold water
  3. Cover and bring to a boil over medium-high heat.
  4. Immediately turn the heat down to low and cook until all the water is absorbed, about 15 minutes.
  5. Turn off the heat and let rest, still covered, for another 10 minutes.
  6. Fluff and serve.
  7. Add a pinch of salt and 1 teaspoon butter or olive oil to the pot before cooking.
  8. For long-grain rice, wash well, and increase the water to 1 1/2 cups.
  9. For brown rice, increase the water to 2 cups and the cooking time to 40 minutes.
