Plain Rice: Absorption Method One
- 1 cup short-grain rice
- 1 cup plus 2 tablespoons cold water
- Rinse or wash: 1 cup short-grain rice
- Drain well and put into a heavy saucepan with: 1 cup plus 2 tablespoons cold water
- Cover and bring to a boil over medium-high heat.
- Immediately turn the heat down to low and cook until all the water is absorbed, about 15 minutes.
- Turn off the heat and let rest, still covered, for another 10 minutes.
- Fluff and serve.
- Add a pinch of salt and 1 teaspoon butter or olive oil to the pot before cooking.
- For long-grain rice, wash well, and increase the water to 1 1/2 cups.
- For brown rice, increase the water to 2 cups and the cooking time to 40 minutes.
