Mozzarella Stuffed Italian Meatloaf
- 1 pound Ground Beef
- 2 Eggs, Beaten
- 1/2 cups Breadcrumbs
- 1/2 cups Parmesan, Grated
- 2 cloves Garlic, Grated Or Minced
- 2 Tablespoons Basil
- 2 Tablespoons Oregano
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 2 Tablespoons Minced Onion, Or 1/2 Fresh Onion, Grated
- 3 sticks Mozzarella String Cheese, Or Cubed Block Mozzarella (no Shredded Cheese)
- 1 cup Marinara Sauce
- Preheat oven to 350 degrees F.
- In a large bowl combine first 10 ingredients (everything down to and including the onion).
- Press half of the mixture into a loaf pan.
- Put the cheese sticks down the center of the pan but do not allow them to touch the edges of the pan.
- Cover with the rest of the meat mixture and seal so cheese wont ooze out.
- Top with spaghetti sauce and bake 55 minutes.
