Chicken and Yellow Rice My Way
- 2 lbs boneless skinless chicken thighs
- 1 34-2 cups chicken broth (depending how saucy you want it) or 1 34-2 cups stock (depending how saucy you want it)
- 5 ounces yellow rice (Vigo brand is what I use)
- 1 medium onion, diced (I use a white onion)
- salt
- pepper
- 12 teaspoon dried thyme
- 14 teaspoon red pepper flakes
- 12 teaspoon garlic powder
- 1 -2 tablespoon olive oil
- Salt and pepper chicken on both sides.
- (Remember the broth/stock has salt in it as well as the rice mix so go easy).
- In a deep 10" skillet, brown chicken in olive oil, over medium hight heat, on both sides 3-5 minutes each side.
- Add onion, it'll be tight don't worry, and saute another 3-5 minutes.
- Add thyme, garlic powder, and red pepper flakes.
- Stir to coat.
- Add rice mix and chicken stock, stir to submerge all rice and distribute rice seasonings.
- Reduce heat, cover and simmer 25-30 minutes, shaking several times, till rice is cooked but not mushy.
- Serve with your favorite veggies as a side.
