Chicken and Yellow Rice My Way

  1. Salt and pepper chicken on both sides.
  2. (Remember the broth/stock has salt in it as well as the rice mix so go easy).
  3. In a deep 10" skillet, brown chicken in olive oil, over medium hight heat, on both sides 3-5 minutes each side.
  4. Add onion, it'll be tight don't worry, and saute another 3-5 minutes.
  5. Add thyme, garlic powder, and red pepper flakes.
  6. Stir to coat.
  7. Add rice mix and chicken stock, stir to submerge all rice and distribute rice seasonings.
  8. Reduce heat, cover and simmer 25-30 minutes, shaking several times, till rice is cooked but not mushy.
  9. Serve with your favorite veggies as a side.
  10. ENJOY!
