Avocado-Tofu-Egg Dip

  1. Place vinegar, water, tofu and avocado in the jar of a blender - or a food processor fitted with the steel blade attachment.
  2. Puree until smooth.
  3. Transfer to a bowl.
  4. Coarsely grate or finely chop the hard-cooked eggs.
  5. Stir these, plus all remaining ingredients into the puree.
  6. Cover tightly and chill.
