All-Purpose Cooked Tomato Sauce

  1. In large saucepan, heat oil over medium heat; stir in tomatoes, mashing with potato masher.
  2. Stir in tomato paste plus one tomato paste can of water.
  3. Add garlic, sugar, basil, oregano, salt, pepper and hot pepper flakes; bring to boil.
  4. Reduce heat to very low and simmer, uncovered, for about 45 minutes or until thickened and fairly smooth.
  5. Taste and adjust seasoning.
