Upside-Down Sunshine Cake

  1. Heat oven to 350 degrees F.
  2. Spray 13x9-inch baking dish with cooking spray.
  3. Sprinkle dry gelatin mix onto bottom of prepared dish.
  4. Top with pineapple; place cherry in center of each slice.
  5. Prepare cake batter as directed on package; pour over fruit.
  6. Bake 40 to 45 min.
  7. or until toothpick inserted in center comes out clean.
  8. Cool 5 min.
  9. Loosen cake from sides of dish; invert onto platter.
  10. Gently remove dish; cool cake completely.
  11. Serve topped with COOL WHIP.
