Bacon And Cheese Polenta Squares Recipe

  1. Preheat oven to 400.
  2. Line an 8" baking pan with foil.
  3. Grease foil.
  4. Bring margarine and stock to a boil in a medium saucepan over medium heat.
  5. Gradually pour in cornmeal, stirring constantly.
  6. Add in jalapeno, onion, salt and pepper.
  7. Cook, stirring over medium heat 5 min or possibly till thick.
  8. Remove from heat; stir in bacon, cilantro, Large eggs and corn.
  9. Spoon into prepared pan.
  10. Sprinkle with cheese.
  11. Bake 12 min or possibly till cheese is bubbly.
  12. Remove from oven; let stand 5 - 10 min before cutting.
  13. Cut into 1" squares.
