Triple Chocolate Drizzle Cookies
- 1/2 cup brown sugar
- 1/2 cup caster sugar (super fine sugar)
- 125 grams butter, diced, at room temp
- 1 egg, beaten
- 1 1/2 tsp vanilla extract
- 1 1/2 cup self raising flour
- 1/2 cup milk chocolate baking chips
- 1/2 cup white chocolate baking chips
- 3/4 block of good quality chocolate.... (I use Cadbury)
- Pre heat oven to 160 c and prepare a baking tray lightly greased and lined with baking paper...
- In a mixing bowl cream together both sugars, butter and vanilla extract until pale and light.
- Add egg then fold in flour followed by the chocolate chips.
- Bake for 15-20 minutes or until cooked...
- Allow to cool completely on a rack..
- Meanwhile melt the block of chocolate in a heat proof bowl, placed over a pot of simmering water... (dont let any water get in the bowl) mix gently until melted and smooth.
- Once cookies are cool drizzle melted chocolate all over them!
