Memes Creamed Corn

• 1 tablespoon bacon fat or canola oil
• Scraped kernels from 6 ears fresh sweet corn (about 3 cups) (see page 188)
• Coarse salt and freshly ground black pepper
• 4 tablespoons (1/2 stick) unsalted butter

1. In a large skillet, heat the bacon fat over medium heat until sizzling.
2. Add the corn and season with salt and pepper.
3. Cook until tender, about 15 minutes.
4. Add the butter and stir to combine.
5. Taste and adjust for seasoning with salt and pepper.
6. Serve immediately.
