Country Potato and Onion Pie
- 14 cup butter
- 5 large new potatoes, sliced
- 2 medium onions, sliced
- 12 large eggs, lightly beaten
- 2 cups grated swiss cheese
- 12 cup milk
- 12 cup chopped fresh parsley
- 12 teaspoon kosher salt
- 12 teaspoon black pepper
- Preheat oven to 400F.
- In a 10 inch cast iron skillet, melt butter over medium heat.
- Add the potatoes and onions.
- Bake until tender and crispy, about 25 minutes.
- In a medium bowl, combine eggs, cheese, milk, parsley, salt, and pepper.
- Pour over potatoes and onions.
- Bake until eggs are set, about 20-30 minutes longer.
