Country Potato and Onion Pie

  1. Preheat oven to 400F.
  2. In a 10 inch cast iron skillet, melt butter over medium heat.
  3. Add the potatoes and onions.
  4. Bake until tender and crispy, about 25 minutes.
  5. In a medium bowl, combine eggs, cheese, milk, parsley, salt, and pepper.
  6. Pour over potatoes and onions.
  7. Bake until eggs are set, about 20-30 minutes longer.
