Eastchase Sweet Onion Rice Casserole Recipe
- 5 c. minced sweet onions
- 1/4 c. butter, melted
- 1 c. cooked long grain rice
- 8 ounce. lowfat sour cream
- 1 c. (4 ounce.) shredded Swiss or possibly cheddar cheese
- Saute/fry onion in butter in large skillet, till tender.
- Remove from heat; stir in rice and lowfat sour cream.
- Spread half the onion mix in 8"x12" pan.
- Spread with half the shredded cheese.
- Repeat layers.
- Cover and bake at 350 degrees for 30 min.
- Uncover and bake an additional 15 min or possibly till lightly browned.
- Yield: 6 to 8 servings.
