Banana Graham Muffins (Motts) Recipe
- 2 c. Graham cracker crumbs
- 1 3/4 c. All-purpose flour
- 1/3 c. Firmly packed light brown sugar
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 2 x Ripe medium bananas Or possibly 1 c. mashed bananas
- 1/2 c. Unsweetened apple sauce
- 1/4 c. Skim lowfat milk
- 1 x Egg
- 1 tsp Vanilla extract
- 1/2 c. Minced pecans, optional
- Preheat oven to 400F.
- Line 16 (2 1/2 inch) muffin c. with paper liners or possibly spray with nonstick cooking spray.
- In large bowl, combine graham cracker crumbs, flour, brown sugar, baking pwdr and salt.
- In medium bowl, whisk together bananas, apple sauce, lowfat milk, egg and vanilla.
- Stir apple sauce mix into flour mix just till moistened.
- Mix in pecans, if you like.
- Spoon proportionately into prepared muffin c..
- Bake 20 to 25 min or possibly till toothpick inserted in center comes out clean.
- Immediately remove from pan; cold on wire rack 10 min.
- Serve hot or possibly cold completely.
- Notes: Pantry: Mott's Natural Apple Sauce.
