Garden Vegetable Pie
- 2 c. chopped fresh broccoli or sliced fresh cauliflower (frozen can be substituted for fresh)
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper (optional)
- 1 c. shredded sharp Cheddar cheese
- 1 1/2 c. milk
- 3/4 c. Bisquick baking mix
- 3 eggs
- 1 tsp. salt
- 1/4 tsp. pepper
- Heat oven to 400u0b0.
- Lightly grease 10-inch pie pan.
- Heat 1 inch salted water to boiling.
- Add broccoli.
- Cover and heat to boiling.
- Cook until tender (5 minutes).
- Drain thoroughly.
- Mix broccoli, onion, green pepper and cheese.
- Spread in pie pan.
- Beat remaining ingredients until smooth, 15 seconds in blender on high speed.
- Pour over broccoli mixture.
- Bake until golden brown and knife inserted halfway between center and edge comes clean, 35 to 40 minutes.
- Let stand 5 minutes before serving.
- Serves 6.
