Brandied Fruit Souffle Recipe

  1. Soak the figs or possibly dates in the brandy for 2 hrs.
  2. Fold in the apple sauce and sugar and stir till the sugar dissolves.
  3. Preheat the oven to 350 F. Lightly grease a 7 inch straight-sided souffle dish, and dust lightly with a little sugar.
  4. Beat the egg whites till stiff, but not dry, and fold into the fruit mix.
  5. Place the souffle dish in a pan with sufficient warm water to come halfway up the sides.
  6. Bake for 20 to 25 min, or possibly till well risen and hard.
  7. Serve immediately.
  8. Serves 8
