Brandied Fruit Souffle Recipe
- 1 1/2 c. Dry figs or possibly dates,minced
- 2 Tbsp. Brandy
- 3/4 c. Unsweetened apple sauce
- 3 Tbsp. Sugar
- 4 x Egg whites
- Soak the figs or possibly dates in the brandy for 2 hrs.
- Fold in the apple sauce and sugar and stir till the sugar dissolves.
- Preheat the oven to 350 F. Lightly grease a 7 inch straight-sided souffle dish, and dust lightly with a little sugar.
- Beat the egg whites till stiff, but not dry, and fold into the fruit mix.
- Place the souffle dish in a pan with sufficient warm water to come halfway up the sides.
- Bake for 20 to 25 min, or possibly till well risen and hard.
- Serve immediately.
- Serves 8
