Clermont Smash
- 10 to 12 mint leaves, plus 1 mint sprig
- 3/4 ounce Velvet Falernum (clove-spiced liqueur)
- Ice cubes, plus crushed ice
- 1 1/2 ounces bourbon
- 1 ounce fresh lemon juice
- 3 dashes of peach bitters
- 1 pineapple spear
- In a cocktail shaker, muddle the mint leaves with the Velvet Falernum.
- Add ice cubes and the bourbon, lemon juice and bitters and shake well.
- Strain into a rocks glass filled with crushed ice and stir until the outside of the glass begins to frost.
- Rub the rim of the glass with the pineapple spear, then garnish with the pineapple spear and mint sprig.
