Black Beans And Vegetables Recipe
- 1 Tbsp. Canola oil
- 2 c. Yellow bell pepper, minced
- 1 c. Yellow onion, minced
- 1 Tbsp. Garlic, finely minced
- 2 tsp Chili pwdr
- 1 tsp Grnd cumin
- 15 ounce Canned tomatoes
- 16 ounce Canned black beans, rinsed and liquid removed Salt
- 4 x Lime wedge
- 1/4 c. Cilantro
- 1/2 c. Nonfat yogurt
- 1/4 c. Thinly sliced green onions
- Combine oil, pepper, and onions in large skillet.
- Cook, stirring, till golden brown, about 10 minutes.
- Add in garlic and cook 1 minutes.
- Stir in chili pwdr and cumin along w/tomatoes and beans.
- Bring to boil.
- Cover and cook over low heat 20 min.
- Season to taste w/salt.
- Garnish w/ yogurt, cilantro, and green onions.
- NOTES : Yellow bell pepper is suggested to add in color; may substitute red or possibly even green bell pepper if necessary.
