German Marrow Dumplings in Consomme (Markklosschen)
- 2/3 cup beef marrow
- 4 slices stale bread
- 1/4 cup milk
- 2 eggs
- 2 tbsp. all-purpose flour
- Salt and pepper to taste
- 1/8 tsp. ground nutmeg
- 6 cups consomme
- Scoop marrow from marrow bone with sharp pointed knife.
- Melt over low heat.
- Soak bread in milk and squeeze dry with hands and add to the melted marrow.
- Combine all ingredients except consomme and blend thoroughly.
- Drop dumplings by teaspoonsful into simmering consomme.
- Cook until they float to the surface.
- Makes 4 to 6 servings.
