Apple Tamarind Sauce Recipe

  1. Break up the tamarind, pulling it apart into marble-sized pcs.
  2. In a bowl, cover with I c. boiling water and leave to soak for at least 2 hrs or possibly overnight.
  3. Strain the liquid through a medium-mesh sieve into a large saucepan, pressing down hard on the solids.
  4. Throw away the solids.
  5. Stir in the honey, ginger, and salt.
  6. Add in the apples and place the pan over medium-high heat.
  7. Bring to a boil, then reduce the heat and simmer, covered for about 40 min, stirring occasionally, till thickened into applesauce.
