Low-Fat Ham and Sour Cream Pasta
- 7 12 ounces dried bow tie pasta
- 2 (8 ounce) containers light sour cream
- 1 (12 ounce) container fat-free cottage cheese
- 1 tablespoon flour
- 34 cup 2% low-fat milk
- 2 eggs or 12 cup egg substitute
- 2 cups cubed lean ham
- 12 cup red bell pepper, chopped
- 12 cup finely chopped celery
- 1 tablespoon minced onion
- Cook pasta in boiling water as directed on package.
- Drain.
- Meanwhile, heat oven to 325 degrees.
- Spray a 13x9 casserole dish with nonstick cooking spray.
- In blender container, combine sour cream, cottage cheese, flour, milk, and eggs; blend well.
- In a large bowl, mix ham, bell pepper, celery and onion.
- Add the sour cream mixture and pasta to bowl and mix well.
- Pour into sprayed casserole.
- Spray a sheet of foil with cooking spray and cover baking dish.
- Bake 50-60 minutes or until thoroughly heated.
- Stir before serving.
