Tasty Tilapia On the Grill

  1. Crush croutons and chop the tomatoes and shallots.
  2. I like a lot of tomatoes on mine.
  3. Coat the tilapia in olive oil and then cover with the crushed croutons.
  4. Top with tomato and shallots.
  5. Place on a grill pan and grill with the lid down for about 15 19 minutes (until the fish is white and flaky).
  6. Top with some grated parmesan cheese.
