Beverlys Simple Greek Spinach Pie
- 23 pounds Frozen Spinach, Thawed And Drained
- 1/2 cups Scallions, Finely Chopped
- 1/2 cups Cottage Cheese
- 1 Tablespoon Unsalted Butter
- 1 cup Milk
- 1/2 cups Buttermilk Baking Mix (or Pancake Mix)
- 3 whole Eggs
- 1 teaspoon Lemon Juice
- 1/4 teaspoons Nutmeg
- 3 Tablespoons Grated Parmesan Cheese
- Salt And Pepper, to taste
- Preheat oven to 350 degrees F.
- Layer spinach, scallions, and cottage cheese in a greased 9 or 10-inch pie plate or baking dish.
- Combine remaining ingredients in a food processor or blender.
- Season with salt and pepper to taste.
- Blend until smooth and pour mixture over layers.
- Bake 35-40 minutes, or until a knife inserted in center comes out clean.
