Beverlys Simple Greek Spinach Pie

  1. Preheat oven to 350 degrees F.
  2. Layer spinach, scallions, and cottage cheese in a greased 9 or 10-inch pie plate or baking dish.
  3. Combine remaining ingredients in a food processor or blender.
  4. Season with salt and pepper to taste.
  5. Blend until smooth and pour mixture over layers.
  6. Bake 35-40 minutes, or until a knife inserted in center comes out clean.
