Southern Salmon Cakes
- 1 (14 3/4 ounce) can salmon, cooked
- 12 cup mayonnaise
- 2 eggs
- 1 cup breadcrumbs
- 1 teaspoon garlic
- 1 teaspoon onion powder
- 12 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon finely ground kosher salt or 1 teaspoon table salt
- 1 teaspoon paprika
- 12 onion, chopped
- 12 bell pepper, chopped
- 14 cup olive oil or 14 cup sesame oil or 14 cup ghee or 14 cup canola oil
- Drain can of salmon or use cooked salmon.
- Remove skin and bones.
- Flake salmon.
- Mix all ingredients including eggs into a mixing bowl.
- Broil or fry 5 minutes per side or until golden brown, turning once.
- Serve with sauce of your choice.
