Stir Fried Udon Noodles with Yuzu Pepper

  1. You need about this amount of vegetables.
  2. I used 1/2 an onion, 1/4 of a carrot and 1/4 of a bunch of shimeji mushrooms.
  3. Cut the vegetables and meat into bite sized pieces.
  4. Dissolve the soy sauce with yuzu pepper.
  5. Bring a pot of water to a boil.
  6. Defrost the udon noodles.
  7. If you're in a hurry defrost the noodles in the microwave and rinse briefly.
  8. Heat some oil in a frying pan over medium heat and stir fry the meat.
  9. A lot of fat comes out of pork belly so wipe it out of the pan with paper towels.
  10. Stir fry the vegetables starting with the ones that take the longest to cook.
  11. Season with salt and pepper.
  12. Turn the heat up to high from this point on!
  13. Add the drained udon noodles, dashi stock granules and the combined soy sauce and yuzu pepper.
  14. Mix well.
  15. Transfer to serving plates, top with bonito flakes and chopped green onion and enjoy!
