Macaroni With Meatballs In A Sour Cream Sauce Recipe
- 1 pound grnd beef
- 1/4 c. bread crumbs
- 2 teaspoon chopped parsley
- 1 teaspoon salt
- 2 c. water
- 3 tbsp. flour
- 1 1/3 c. lowfat milk
- 1/4 c. chopped onions
- 1 egg
- Generous dash of pepper
- 1 c. lowfat sour cream
- 6 ounce. (3 c.) macaroni
- Mix beef, lowfat milk, crumbs, onions, 1 Tbsp.
- parsley, garlic, egg, 1 tsp.
- salt, pepper.
- Shape into balls about 1 1/2 inch.
- In pan combine 2 c. water, with remaining parsley, salt, bring to boil.
- Drop meatballs into boiling water a few at a time.
- Cover, simmer 30 min.
- Remove and gradually blend lowfat sour cream into warm water.
- Mix flour and cool water to create a smooth paste, stir into lowfat sour cream sauce and cook a few min, stirring till sauce thickens a little.
- Add in meatballs.
- Meanwhile cook macaroni as directed on package, drain.
- Serve sauce and meatballs over macaroni, garnish with minced parsley.
- 4 to 5 servings.
